Zoodles Shrimp Pad Thai Recipe is the perfect low carb meal. Zucchini noodles, that I like to call zoodles are the perfect alternative to pasta. You get your noodle fix with non of the carbs! Add a delicious sauce, shrimp, and peanuts for a Thai inspired dish with zero guilt.

What is Zoodles Shrimp Pad Thai Recipe

Zoodles is a name given to noodle made from zucchini. We've combined these vegetable ribbons with a Thaiinspired sauce, scrambled eggs, andshrimpfor a takeout quality meal without the guilt.

Spiralize!

I created my zucchini noodles using the KitchenAid 5 Blake Spiralizer with Peel, Core and Slice attachmentfor my KitchenAid Artisan Tilt-Head Stand Mixer. This has been the funnest little gadget. You can core and peel apples, create shoestring fries, shred carrots - and so much more! Pad Thaiis characterized by rich, vibrant flavors, from funky to sour to sweet.

What Do I Need To Make This Zoodles Shrimp Pad Thai Recipe

For this recipe I used:

  • 5 zucchini
  • ½ a head of napa cabbage
  • fresh cilantro
  • green onions
  • garlic
  • lime
  • sugar
  • peanuts
  • garlic chili sauce
  • fish sauce
  • peanut butter
  • soy sauce
  • olive oil
  • eggs
  • raw deveined shelled shrimp with the tail on

Including all of these greens really lightened up the dish and made it fresh and vibrant.

Making your Zoodles Pad Thai

Once your ingredients are prepped this dish comes together very fast!

1. Start by spiralizing your zucchini. I prefer to use the KitchenAid 5 Blake Spiralizer with Peel, Core and Slice attachment, but there are many tools out there that can turn your zucchini into strings.

2. Rough chop your Napa cabbage and cilantro, dice your green onions.

3. Prepare the sauce by combining lime juice, fish sauce, soy sauce, sugar, chili garlic sauce, and peanut butter in a medium sized bowl. Whisk until combined. Don't worry of the sauce isn't smooth - it will melt when we heat it.

4. Heat 2 tablespoon olive oil in a non-stick pan.

5. Add shrimp and cool until pinked and opaque. This will only take a few minutes. Remove shrimp from the pan and set aside.

6. Add garlic to the pan and stir quickly until fragrant.

7. Add in Napa cabbage and do a quick stir.

8. Toss in your spiralized zucchini noodle. Do another quick stir.

9. Move ingredients to the edges of the pan and pour in 4 slightly beaten eggs. Do a quick scramble and toss with cabbage and zucchini.

10. Return shrimp to pan.

11. Pour in prepared sauce. Toss to coat and heat thru. Turn off heat.

12. Add peanuts.

13. Add cilantro and green onion. Serve immediately.

  • 2 Tablespoon avocado oil or olive oil
  • 6 medium zucchini spiralized
  • ½ head of napa cabbage chopped
  • 1 clove garlic minced
  • 3 eggs lightly scrambled
  • ¼ cup cilantro chopped
  • 1 bunch of green onions sliced
  • 1 pound medium shrimp peeled and deveined
  • ¼ cup of peanuts chopped
